Recipe You may multiply the proportions for larger batches. 1 cup white sugar ½ cup plain water ½ cup cream 1 tsp Vanilla extract or 1 tbsp vanilla flavour Add 1/4 - 1/2 tsp of salt if you would like to make it salted caramel sauce Directions: Place your sugar into the sauce pan, shake to level the sugar at the bottom of the pan Add the water The sugar will naturally absorb the water. There is no need to stir. Place the sauce pan on medium to high heat. DO NOT STIR THE MIXTURE. Stirring will cause the sugar to crystallise. Wait until the mixture turns golden brown. This could take up to 5 minutes. Once it reaches the color that you are aiming for, turn the heat to low. Stir the cream and vanilla mixture in. Let sugar begin to melt. The sugar will liquefy around the edge of the kettle. Begin to stir constantly to ensure the sugar melts evenly. Stir until the sugar is completely melted and dark amber in color. Remove from heat. Slowly stir in heavy cream in small amounts. The caramel will bubble vigorously, but continue adding cream until it is incorporated and the caramel is smooth. Add the vanilla and rum, if using. Add in cold butter and stir slowly to bring down the temperature of the caramel. Stir until completely smooth. Pour into an airtight jar and store in the refrigerator. Caramel will harden when it's in the refrigerator. To use, bring to room temperature or heat slowly in the microwave.

Place the saucepan over medium heat and stir until the sugar has dissolved. Cook the sugar for 8-10 minutes until it has become a deep amber shade. Remove from the heat and pour in the cream. The sauce will bubble up but continue to stir until the cream is evenly combined. Add in the butter and mix until combined. Add the salt slowly, tasting before adding more. Leave the caramel to cool slightly before serving. There are various types of SALTED CARAMEL. The color you achieve depends on the temperature of your stove and how fast you add the butter. NOTICE: For the dark caramel I did not add salt because I don’t want it too salty cos I used Margarine. Margarine as we all know is already salted and I decided to skip the salt. If you want the salt element, go ahead and add to yours. Your light salted caramel can be slightly darker than mine, if you want it darker. Delicious sauce for toppings, frosting, and drizzling. Una maraming nagkakamali kung paano ito lutuin lalo na sa syrup dahil basically white sugar lang ang ginagamit then niluluto, sinusunog hanggang maging slightly brown sya yung iba my after taste na lasang sunog na asukal..so para hindi na tayo masunugan gagamit tayo ng brown para una kasi masarap n sya itself, pangalawa kulay brown na sya instant color na sa ating caramel sauce.. ang gagawin na lang natin lulutuin sya na parang gumagawa ka lang ng syrup ng letche flan.
